Serves 6 | 4 hrs prep and cooking time
Begin with the ribs. They will need 2 1/2 hrs in the oven. The lemon squares should be made next (if not earlier in the day) so you can put them in the oven right after the ribs come out. Make the fruit salad and place in the fridge. 20 minutes before the ribs are done you can start the grill and make the shrimp. Once you serve the shrimp you can put the ribs on the grill. Perfecto!

Peel and pull the clementines into segments. Halve or quarter strawberries if large. Peel and slice the bananas. Pit the peaches and plums and cut into wedges. Toss all the fruit in large bowl.
Stir the honey and vanilla bean, if using, in a small bowl and microwave on low until just warmed and syrupy, about 1 minute. Toss with fruit and let cool.
Caribbean Grilled Shrimp
Once shrimp has thawed, season abundantly with Caribbean Jerk spice.
Grill shrimp for 2-3 minutes on each side and serve with bleu cheese dressing to dip in.

Rinse ribs with cold water and pat dry.
Season abundantly with your favorite herbs and spices.
Fill baking sheet with 1/4″ water and wrap tightly with tin foil. Bake @350F for 2 1/2 hrs.
Apply loads of your preferred BBQ sauce. My favorite is Bone Suckin’ BBQ Sauce. Sweet Baby Ray’s is a great backup if you can’t find Bone Suckin’.
Top with a generous portion of brown sugar.
Char on the grill for 20-30 minutes.
Finish with a spray of apple juice all over. Let cool for 5-10 minutes before cutting (cut bone side up for an easier time).
Addictive Lemon Squares

Preheat oven @350F. Grease a 9 x 13 pan with butter or cooking spray.
Crust: Combine 2 cups of flour, 1/2 cup powdered sugar and butter. Make into a dough and press into a 9 x 13 pan. Bake for 20 minutes until edges are golden brown. Let completely cool.
Filling: Combine eggs, granulated sugar, lemon juice and salt. Whisk together. Fold in 4 Tablespoons of flour and baking powder until combined. Poor mixture over all ready cooled crust and bake at the same temperature for 25 minutes; make sure it is fully baked before removing from the oven in all spots otherwise it will be runny.
Sprinkle powdered sugar over the baked lemon squares while still hot from the oven. Sprinkle again once the squares have cooled.
Cut into squares!
