- red baby bliss potatoes (or another small potato)
- olive oil
- salt & pepper to taste
- rosemary (or another fresh herb you prefer)
- Sour cream
- Chives (diced)

Boil the potatoes for 10-15min in salted water until fork tender
Place the potatoes on a baking sheet that is well greased so they don’t stick.
Using a potato masher gently press down on the potatoes until slightly mashed. Then rotate masher and press again till fully mashed.
Brush the tops of the mashed potatoes generously with olive oil.
Salt and pepper the potatoes.
Finely chop your herb and sprinkle on top.
Bake @450F for 20-25min until brown and crispy.
Put a dollop of sour cream and diced chives to garnish.
