Instructions

Prepare the onion rings first since they need to marinate with the buttermilk mixture for at least an hour. After you have finished frying the onion rings, start cooking the mushrooms. about 5 minutes before the mushrooms are finished, cook the steaks.

Entrée

Pan Seared Steak

Ingredients

  • steak (filet mignon)
  • 1 tblsp butter
  • salt & pepper to taste

I chose filet mignon as my cut. But any preferred cut will do.

I like to cook mine with a combination of the stove and oven. Trust me, it works wonders.

Step 1

Preheat oven @450F and season your steaks well with salt and pepper.

Step 2

Set stove burner to med-high to high heat and add butter. It is important the pan is very hot before adding the steak.

Step 3

Add steak and cook 2 – 2 1/2 minutes on each side. We aren’t trying to cook them through here, just to achieve a nice sear.

Step 4

Place steaks in the oven to cook the rest of the way. Use table below to get desired temperature.

Step 5

Let rest for a few minutes before serving.

Doneness Temperature To The Touch
Very Rare 120° Feels soft and squishy
Rare 125° Soft to the touch
Medium Rare 130° – 135° Yields gently to the touch
Medium 140° – 145° Yields only slightly to the touch, beginning to firm up
Medium Well 150° – 155° Firm to the touch
Well Done 160° Hard to the touch

Buttermilk Onion Rings

Ingredients

  • 1 large onion
  • 2 cups buttermilk
  • 2 cups all-purpose flour
  • 1 tblsp salt
  • 3/4 tsp (to 1/2 tsp) cayenne pepper
  • 1 quart (to 2 Quarts) canola oil
  • black pepper to taste

Step 1

Slice the onion very thin.

Step 2

Place in a baking dish and cover with buttermilk. Let sit for at least an hour.

Step 3

Combine the dry ingredients and put aside.

Step 4

Heat oil to 375 degrees. It is important to get it to this temperature. Otherwise the texture will not be the same.

Step 5

Grab some onions and toss them into the dry mixture. Drop in oil and leave in there until they turn a golden brown.

Sautéed Mushroom Medley

Ingredients

  • 2 lbs mixed wild mushrooms (such as: cremini, shiitake, porcini, and portobello)
  • 1/2 cup good olive oil
  • 1 cup chopped shallots (4 large)
  • 4 tblsps unsalted butter
  • 2 tsps salt
  • 1/2 tsp black pepper
  • 2 tblsps chopped garlic
  • 1 cup chopped leaf parsley

Step 1

Rinse off the mushrooms (without getting the under part of the caps wet) and slice thick.

Step 2

Heat the olive oil in a large saucepan and add shallots to cook over medium heat for 4-5 minutes.

Step 3

Add butter, mushrooms, salt and pepper and cook over medium heat for 12-14 minutes.

Step 4

Add garlic and cook for 3 more minutes. Toss in parsley and serve.
